During lockdown, cooking has become a hot trend on TikTok. Not being able to eat out, young people turn their focus to easy but delicious dishes that they can cook at home. For that reason, videos showing people how to use leftover rice to make tteokbokki (Korean rice cake) become a trend on TikTok for the last few days. The trend originated from a video of a TikTok account named Goc Cua Hang.

After this clip was uploaded on TikTok, countless social networks users, both on TikTok and Facebook try making tteokbokki with leftover rice. .

Recipe: Tteokbokki from leftover rice

Ingredients

2 cups of leftover rice

1/4 cup of rice flour

1/4 cup of tapioca flour

2-3 sausages

Chili sauce, ketchup, sugar, Korean chili powder, soy sauce, drinking water.

1/2 onion, scallions

Optional: cabbage, roasted sesame, boiled eggs

Zip bag, pestle

Instruction

Put the rice in a zip bag (or mortar) and then smash it hard with a pestle until the mixture became a very sticky dough.

Pour tapioca flour into the mixture then knead the dough until it becomes smooth, non-sticky.

Shape the dough into a long stick and cut into pieces. Cover each piece with flour to avoid them sticking together.

Boil a pot of water, put the rice cakes in. When the tteokbokki is cooked, take them out and put them in a bowl of cold water.

To make the sauce, saute the onion, add 1 tablespoon sugar, 1 tablespoon chili sauce, 1 tablespoon ketchup, 1 teaspoon soy sauce, 1 teaspoon Korean chili powder, 1/2 teaspoon seasoning, 150-200ml drinking water and bring the mixture to the boil.

Put the rice cakes in the sauce. Leave the heat on for 1-2 more minutes then add sausages, cabbage and onions.

Turn off the heat when the sauce gets thickened, then add hard-boiled eggs, roasted sesame seeds, and chopped scallions.

Notes

If rice is too dry, you should add a little water to soften the dough.

Gloves should be worn when kneading glutinous rice and flour to avoid the mixture sticking to your hands.
